Director of Operations

With over 30 years of experience in food and beverage operations, product development, team building, branding and culinary innovation, Darren Wightman is a highly respected hospitality professional. Beginning his career in his native Australia, as a young chef and working his way up to Executive Chef, Operations Director and VP of Operations in a variety of concepts and environments, from small independent operations, multi unit concepts to 5 Star Hotels.

Darren’s experience and skill set have provided him with first hand knowledge of multiple disciplines of the hospitality industry; from critical path timeline management, budgeting and forecasting, operational design, service flow, menu development, licensing & permitting, product and vendor sourcing, team recruitment and training, creative brand launching into new markets and ensuring that a company culture translates and resonates.

Darren hold’s dual citizenship (Australia and the United Kingdom) and a US Green card, making him a truly global citizen, having lived and worked around the world working on a variety of different projects in; Hong Kong, France, Indonesia, England, UAE, Greece, Brazil and the USA. His hospitality service training and experience through YO! Sushi, Ping Pong, Innovative Dining Group, Intercontinental Hotel Group and Food & Beverage Solutions have further validated his strengths in the consistent delivery of a premium product and professional services, with a laser focus on ensuring an inspired and memorable guest experience.
